Light Dry Malt Extract (DME) is concentrated brewers wort dried to a fine powder, prized for delivering clean, reliable malt character without a mash. Made from pale base malt, it keeps flavor neutral and color light, making it the most versatile extract a brewer can keep on hand.

At 44 PPG, Light DME is one of the most gravity-dense fermentables available — one pound raises five gallons by nearly nine points — and its pale 4 °Lovibond color keeps even light lagers and IPAs in range.

Usage Recommendations

For a full extract batch, use roughly 6–7 lbs of Light DME per 5 gallons for a standard-strength beer; for gravity correction, each pound adds about 8–9 points to 5 gallons. For yeast starters, use about 100 grams per liter of water (roughly a 1.040 starter).

Add a portion late in the boil rather than all at the start to keep color light and hop utilization predictable, and whisk it in off the heat to prevent clumping.
